Dalam perkembangan teknologi yang sangat pesat juga menyentuh kemajuan industri makanan. Perkembangan industri makanan sangat luar biasa. Saat ini dijumpai sangat banyak variasi dan jenis makanan dan minuman instan yang diproduksi dan menjadi konsumsi masyarakat modern. Teknologi industri makanan tidak terlepas dari penggunaan zat aditif dalam makanan dan minuman. Terdapat zat aditif yang aman, beresiko dan berbahaya. Masyarakat harus cermat dalam menmilih makanan dan minuman instan berkaitan dengan penambahan zat aditif tersebut.
Dalam membeli makanan, minuman atau obata-obatan sebaiknya harus mencermati label yang terdapat dalam makanan tersebut. Isi kandungan komponen bahan-bahan yang tertera dalam label tersebut harus diketahui keamanan dan akibat yang bisa ditimbulkannya Selain kandungan utama makanan, minuman atau obat-obatan akan ditemukan komponen lain yang mengandungi berbagai bahan campuran. Bahan-bahan campuran ini diberi nama aditif, contohnya, bahan-bahan campuran yang diberi nama huruf awal “E”, seperti E101 (Riboflavin), E123 (Amaranth), E211 (Natrium Benzoate), E249 (Kalium Nitrit), E322 (Lesitin) dan sebagainya.
Dalam industri makanan modern saat ini diperlukan penggunaan teknologi pengawetan pangan untuk membuat makanan menjadi tahan lama dan tetap berkualitas, Salah satu dari beberapa teknik pengawetan pangan adalah memberikan bahan tambahan pangan (BTP) untuk pengawetan, hal ini dilakukan dengan menambahkan suatu bahan kimia tertentu dengan jumlah tertentu yang diketahui memiliki efek mengawetkan dan aman untuk dikonsumsi manusia.
BAHAN ADITIF MAKANAN
Aditif adalah bahan kimia yang dicampurkan ke dalam makanan yang berguna untuk meningkatkan kualitas, menambahkan kelezatan dan menjaga kesegaran makanan tersebut. Penggunaan aditif sebenarnya bermula sejak ribuan tahun lalu. Nenek moyang kita telah menggunakan garam untuk mengawet daging dan ikan, rempah untuk melezatkan makanan, dan cuka serta gula untuk menyimpan buah-buahan.
Departemen Kesehatan dan BPOM mengistilahkan Bahan aditif Makanan dengan BPT (Bahan Tambahan Pangan ). Bahan Tambahan Pangan adalah bahan tambahan pangan yang dapat mencegah atau menghambat fermentasi, pengasaman atau penguraian dan perusakan lainnya terhadap pangan yang disebabkan oleh mikroorganisme. Kerusakan tersebut dapat disebabkan oleh fungi, bakteria dan mikroba lainnya. Kontaminasi bakteria dapat menyebabkan penyakit yang dibawa makanan (food borne illness) termasuk botulism yang membahayakan kehidupan
Aditif yang bertindak sebagai pewarna telah digunakan untuk memberi warna kuning kepada mentega sejak dahulu kala. Penduduk Asia telah menggunakan sejenis sup atau makanan lainnya dengan pemberian bahan mononatrium glutamat atau MSG, sejak 2.000 tahun lalu.
